A Vata Season Soup

Creamy Vegetable Soup -Winter Recipe

Winter is typically a Vata season. During this period you should be eating more nuts, soups, stews and a big protein diet. Here we are sharing a recipe which is super nutritious. It helps in balancing all your doshas and is an ideal winter recipe.

Underground veggies are more beneficial in winter seasons since they are heavy and dense and pacify Vata. Here are the choice of vegetables is up to you.

Ingredients-

1/4 cup carrots cubed

1 cup potato cubed

1/2 cup sweet potatoes cubed

Ginger garlic paste - 1 tsp

Sweet peas - 1/2 cup

Tomato- sliced 1

Onion - 1/2 sliced

Thick coconut milk - 1 cup

Red chili powder - 1 tsp

Coriander powder - 1 tsp

Turmeric powder - 1/2 tsp

Coconut oil - 1 tsp

Coriander- to garnish


Method of Preparation-

In a pan add 1 tsp coconut oil and sauté the onions until caramelized. Add ginger garlic paste and turmeric powder and sauté for 2 minutes. Add the sliced tomato and cover and cook for 5 minutes. Then add chili powder, coriander powder and mix well. Add the cooked vegetables and 1/2 cup water. Bring water to a boil and add coconut milk. Mix well and switch off the flame. Garnish with coriander leaves. Serve warm. You can also use this along with rice and bread as a side dish.
