Healthy Breakfast Recipe - Semolina Upma 🌈

Traditionally upma was made with coarse ground rice or wheat which is known as rava, suji & semolina.

You can also follow the procedure to make Upma with other ingredients like oats, vermicelli, poha, bread etc.

Prep the ingredients first. Take 1 cup semolina (fine variety), ⅓ cup finely chopped onions, 1 teaspoon chopped green chillies, 1 teaspoon finely chopped ginger and 2 tablespoons coriander leaves (cilantro). Also take 8 to 10 curry leaves, 10 to 12 cashews, 1 teaspoon chana dal and 1 teaspoon urad dal.

In a pan, heat 2 tablespoons ghee (clarified butter) or oil. Lower the heat. Garnish with roasted cashews and coriander leaves. Add 1 teaspoon mustard seeds. Now add the ½ teaspoon cumin seeds along with 1 teaspoon chana dal (husked and split bengal gram) and 1 teaspoon urad dal (husked and split black gram). In a different pan gently roast the semolina until it becomes aromatic. Now add the finely chopped onions. Sauté the onions until they soften and become translucent on a low to medium-low heat. Then add the chopped green chillies, ginger and curry leaves. You can also add 1 dried red chilli at this step. No add 2 Cups of water for 1 cup of semolina and add required amount of salt and bring to a boil. Add semolina and stir and mix immediately. Lower the flame and cook to desired consistency.

Cover and allow the rava upma to steam for 2 to 3 minutes on a low heat. And Switch off the flame and serve warm with chutney.
