Spinach Parathas/ Green Rotis
We all know Iron is a key nutrient that ensures proper growth and functioning of the body and promotes the production of proteins that transport oxygen and regulate cell development. But most of us thinks that Iron is required only during pregnancy. But, No! It is necessary to consume adequate amounts of iron in your diet to preserve the bodily functions. Iron deficiency can lead to anemia.
The common categories of food that you can include to supplement enough Iron in your diet is the following -
Red meat
Green leafy vegetables, such as spinach and cabbage

Pulses, such as lentils, beans, and peas

Spinach Chappathi/Paratha
This Spinach flat bread/Parathas are so appealing and at the same time it's healthy and quick to make. You can serve it with curry or make it as a wrap.
Ingredients
Wheat flour - 2 cups
Spinach - 1 cup(tightly packed)
Green Chili - 1
Cumin seed - 1/2 tsp
Salt to taste
Water as needed
Blanch the spinach, bring a pot of water into boil and add the spinach, let it sit for 30 sec. Drain it put the spinach into the mixer/blender jar along with green chili & cumin seeds, grind into smooth puree. Take the wheat flour in a bowl, add enough salt, mix it well and then add the spinach puree. Make a smooth dough with just enough water after adding the spinach puree. Let it rest for 10-15 mins. Divide the dough into equal parts and roll them into smooth balls.Dust the working surface with flour and using rolling pin spread the dough into thin sheet. Heat the pan and place the rolled thin sheet on the tava and cook for 30-40 secs on one side, when you see the bubbles on the top, flip into other side and cook till the brown spots occurs.
Serve it with your favorite curry.
