Pomegranate Pudding
This a pure vegan health recipe with no animal products like gelatin or eggs. I use almond milk for this. You can substitute this with cashew milk or whole milk also. And I used agar - agar which is a sea weed as the thickening agent. You can substitute it with Gelatin.
Ingredients-
1. Fresh pomegranate juice - 1 Cup
2. Agar - Agar - 2 tablespoons chopped
3. Almond milk - 2 Cups
4. Cardamom powder - 1/4 tsp for flavor
Method of preparation-
Strain the juice. chop the agar agar into small pieces with kitchen scissors. Soak the agar agar in 1 cup water, after 5 minutes, in a saucepan, cook the agar agar-water mixture on a medium flame stirring the mixture. The water will reduce and you should see a gelatinous liquid mixture. Switch off the flame and pour almond milk. Stir and add pomegranate juice and sugar. Stir again and just warm the mixture. Place in the refrigerator for 3-4 hours, till the pomegranate pudding sets. Garnish with some pomegranate arils or chocolate sprinkles.
