Corn Soup For Healthy Breakfast
Ingredients
1 1/2 cup fresh corn kernels
1 medium potato finely chopped
1/4 cup green peas
1/2 cup chopped carrots
1/2 cup chopped green beans
salt as needed
black pepper as needed
1 tsp ghee
2 1/2 cups water
Instructions
Add one tsp of ghee in a soup pot, all the vegetables and saute for two minutes. Next add water and bring to a boil. Once boiling, reduce the heat to a low flame and cook until the vegetables are soft. Add salt and pepper and serve hot.
Grilled Corn
In a small bowl, mix 2 tablespoons finely chopped cilantro with ¼ teaspoon lime zest, and 1/2 teaspoon sea salt. Mash in 1/4 cup softened unsalted butter until well combined
Apply it over the top of the corn and grill it at 425 F for 20 minutes.
