Black beans and Pumpkin side dish Recipe
Pumpkin - An orange fruit harvested in October goes hand in hand with the Fall holidays and Halloween decorations. More than that this versatile plant is rich in Vitamins and flowers, seeds and flesh is edible as well. Ingredients-
Black-eyed beans - 3/4 Cups
Pumpkin chunks (white or orange) - 1 cup
Green Chilies- 4
Grated coconut- 1 Cup
Coconut oil- 1 tbsp
Mustard Seeds- 1 tsp
Cumin seeds- 1 tsp
Curry leaves- few
Salt - as needed
Method of preparation-
Soak the peas overnight. Cook together the chopped pumpkin, peas, Slit green chilies, and salt in 1/2 Cup of water. Don't overcook the vegetables, they should retain their shapes. Now blend coconut and collect the extract of coconut milk by squeezing it. You can even use store-bought coconut milk instead of squeezed milk. Again add water to the squeezed coconut and take coconut milk. This is called the second extract of Coconut milk. Add the second extract of coconut milk to the cooked and drained vegetables. Allow it to boil and when it boils, switch off the flame and add the first extract of coconut milk. Now heat oil in a pan and splutter mustard and cumin seeds, add it to the dish. This recipe goes well with rice, flatbread and can be enjoyed with other regular meals as well.
